Fans of steel cut oats will love this sweet and satisfying, multigrain hot breakfast. For a brunch buffet, provide a variety of toppings such as nuts, chocolate chips, as well as fresh and dried fruit to customize each bowl.

INGREDIENTS

  • 1 pkg (250 g) GEOVITA Wheat, Barley & Oat Blend
  • 1 cup (250 mL) water
  • 1 cup (250 mL) milk or unsweetened almond beverage (approx.)
  • 1 tsp (5 mL) ground cinnamon
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) ground nutmeg
  • 2 large ripe bananas, mashed (about 1 cup/250 mL)
  • 1 tbsp (15 mL) butter or vegan spread of choice
  • 1 tsp (5 mL) vanilla extract
  • Toppings such as brown sugar or maple syrup, sliced bananas and toasted chopped pecans, yogurt etc. (optional)

DIRECTIONS

  1. Bring water and milk to a gentle boil in a medium saucepan set over medium heat (watch carefully as it can foam up).
  2. Add Geovita blend, cinnamon, salt and nutmeg; reduce heat to low and stir. Cook, partially covered and stirring occasionally, for 15 minutes or until grains are tender but mixture is still creamy.
  3. Stir in mashed banana, butter and vanilla. Add extra milk as needed, to achieve desired creaminess.
  4. Spoon into serving bowls and serve with toppings as preferred.

Tips:

  • For those whose banana bread has to have chocolate chips, add a sprinkle of mini chocolate chips for extra indulgence.
  • To feed a smaller group of 3 to 4 people, reduce recipe proportions as follows: 2/3 cup (150 mL) each water and milk, 1 cup (250 mL) Geovita Wheat, Barley and Oat grains, 1/2 tsp (2 mL) cinnamon, 1/4 tsp (1 mL) salt and a pinch of nutmeg. After the grains are cooked, mix in 1 large mashed banana, 1 1/2 tsp (7 mL) butter and 1/2 tsp vanilla extract. Add extra milk as needed.
  • For a simple flavour twist, replace mashed banana with applesauce and serve topped with diced apples as well as other toppings as preferred.
