No need for takeout, these speedy Tex Mex bowls can be assembled in minutes. The bright, fresh flavours will be an escape from the weeknight dinner blahs that the whole family will enjoy!

INGREDIENTS

  • 1 pkg (250 g) GEOVITA Barley, Spelt & Lentil Blend 
  • 1 1/2 cups (375 mL) sodium-reduced chicken or vegetable broth
  • 2 cups (500 mL) drained, canned black beans
  • 1 large avocado, sliced
  • 1 cup (250 mL) each fresh salsa and crumbled feta cheese
  • 1/4 cup (60 mL) each diced red onion and radishes (optional)
  • Cilantro Lime Cream
  • 1/2 cup (125 mL) sour cream
  • 2 tbsp (30 mL) chopped fresh cilantro
  • 2 tsp (10 mL) each grated lime zest and lime juice

DIRECTIONS

  1. Bring broth to a boil in a medium saucepan set over high heat. Add Geovita blend, reduce heat to low and stir. Cook, covered, for 10 minutes or until broth is absorbed.
  2. Divide grains between 4 serving bowls. Arrange an equal portion of black beans, avocado, salsa, feta, red onion and radishes (if using) over grains.
  3. Cilantro Lime Cream: Blend sour cream with cilantro, lime zest and juice until well combined. Dollop over grain bowls to serve.

Tip: Meat lovers can add sliced cooked chicken breast or grilled steak for added protein. And, feel free to use shredded Cheddar instead of feta cheese.
