INGREDIENTS

  • 1 pkg (250 g) GEOVITA Wheat, Barley & Oat Blend
  • 1 1/2 cups (375 mL) sodium-reduced chicken or vegetable broth
  • 2 cups (500 mL) halved grape tomatoes
  • 1/4 cup (60 mL) each chopped fresh basil and minced red onion
  • 2 tbsp (30 mL) olive oil
  • 1 clove garlic, minced
  • 3/4 tsp (4 mL) each salt and pepper
  • 2 cups (500 mL) shredded, cooked chicken
  • 2 cups (500 mL) blanched broccoli florets or asparagus tips
  • 1 cup (250 mL) mini bocconcini or cubed mozzarella
  • Balsamic glaze (optional)

DIRECTIONS

  1. Bring broth to a boil in a medium saucepan set over high heat. Add Geovita blend, reduce heat to low and stir. Cook, covered, for 10 minutes or until broth is absorbed.
  2. Meanwhile, toss tomatoes with basil, onion, olive oil, garlic, salt and pepper until well combined.
  3. Divide grains between 4 serving bowls. Arrange an equal portion of bruschetta mixture, chicken, broccoli and bocconcini over grains. Drizzle with balsamic glaze (if using).

Tip: Balsamic glaze is a pantry friendly condiment available in most supermarkets. Although it is listed as optional, it adds a delightful, sweet zing of flavour to take this bowl to another level!
