This recipe has all the one-pot convenience of those popular packaged side dishes, but with a healthier twist. Kids will love the cheesy taste, while mom and dad will love the ‘real food’ ingredients.

INGREDIENTS

  • 1 pkg (250 g) GEOVITA Rice, Buckwheat & Split Pea Blend
  • 1 1/2 cups (375 mL) sodium-reduced chicken or vegetable broth
  • 1 cup (250 mL) finely chopped broccoli florets
  • 1/4 cup (60 mL) sour cream
  • 2 tbsp (30 mL) butter
  • 1/4 tsp (1 mL) salt and pepper
  • 1 cup (250 mL) shredded Cheddar cheese

DIRECTIONS

  1. Bring broth to a boil in a medium saucepan set over high heat. Add Geovita blend, reduce heat to low and stir.
  2. Cook, covered, for 7 minutes. Stir in broccoli; continue cooking, covered, for 3 minutes or until broth is absorbed.
  3. Uncover and stir in sour cream, butter, salt and pepper until well combined. Remove from heat; stir in Cheddar cheese until melted. Let stand for 3 minutes.

Tip: Add diced cooked chicken or ham for a one dish meal.
