INGREDIENTS
- 1 pkg (250 g) GEOVITA Rice, Buckwheat & Split Pea Blend
- 1 1/2 cups (375 mL) sodium-reduced chicken or vegetable broth
- 1 cup (250 mL) grated carrot
- 1/2 cup (125 mL) diced red pepper
- 1/2 cup (125 mL) chopped fresh mint or parsley
- 1/2 cup (125 mL) golden raisins
- 1/4 cup (60 mL) olive oil
- 3 tbsp (45 mL) cider vinegar
- 1 tsp (5 mL) each curry powder and honey (or maple syrup)
- 1/4 tsp (1 mL) each salt and pepper
DIRECTIONS
- Bring broth to a boil in a medium saucepan set over high heat. Add Geovita blend, reduce heat to low and stir. Cook, covered, for 10 minutes or until broth is absorbed. Spread grains out in a large shallow bowl to cool slightly.
- Add carrot, red pepper, mint and raisins to bowl. Whisk oil with vinegar, curry powder, honey, salt and pepper; add to grain mixture and toss to combine. Serve at room temperature or reserve in refrigerator for up to 3 days.
Tip: Toss in canned chickpeas for added protein and fibre.
