Inspired by Spanikopita, we’ve taken the traditional pastry filling ingredients and stirred them into wholesome grains and lentils instead. This zesty side dish is great partner for souvlaki skewers or grilled fish.

INGREDIENTS

  • 1 pkg (250 g) GEOVITA Barley, Spelt & Lentil Blend
  • 1 1/2 cups (375 mL) sodium-reduced chicken or vegetable broth
  • 1 tbsp (15 mL) each lemon juice and olive oil
  • 1 clove garlic, minced
  • 2 tsp (10 mL) grated lemon zest
  • 2 cups (500 mL) chopped fresh spinach
  • 1/2 cup (125 mL) crumbled feta cheese

DIRECTIONS

  1. Bring broth to a boil in a medium saucepan set over high heat. Add Geovita blend, reduce heat to low and stir. Cook, covered, for 10 minutes or until broth is absorbed.
  2. Meanwhile, whisk lemon juice, olive oil, garlic and lemon zest together.
  3. Stir spinach and lemon mixture into grains; cover and remove from heat. Let stand for 2 to 3 minutes or until wilted; stir in feta.

Tip: Stir in cubed, cooked chicken, pork or steak for a one-pot meal.
