Effortless and sure to please, this dish sneaks a little extra nutrition into your favourite taco-night flavours with our wholegrain Geovita blend. Serve with a variety of your family’s favourite toppings so that each bowl can be personalized to taste.
INGREDIENTS
- 1 pkg (250 g) GEOVITA Wheat, Barley & Oat Blend
- 1 tbsp (15 mL) canola oil
- 1 lb (500 g) lean ground beef, turkey or chicken
- 2 tbsp (30 mL) taco seasoning blend (from a packet or homemade)
- 1 1/2 cups (375 mL) sodium-reduced beef or chicken broth
- 2/3 cup (150 mL) prepared salsa
- 1 1/2 cups (375 mL) grated Cheddar cheese
- Optional garnishes such as additional salsa, sour cream, avocado, chopped green onions, sliced jalapeno, crumbled nacho chips, etc.
DIRECTIONS
- Preheat oven to 350°F (180°C).
- Heat oil in a large, oven-proof skillet set over medium heat. Add beef and seasoning blend; cook, crumbling meat until browned.
- Stir in Geovita blend, broth and salsa until well combined. Cover with foil and bake for 25 minutes. Uncover and sprinkle evenly with cheese. Bake for 5 minutes or until cheese is melted.
- Serve with a selection of optional garnishes at the table to add as preferred.
Tips:
- If you don’t have an ovenproof skillet, transfer the skillet mixture to a 10-cup (2.5 L) casserole dish to bake.
- Boost nutrition for kids who don’t like their veggies by sneaking in grated veggies such as carrots or zucchini when browning the ground meat base.
- Replace meat with your favourite plant-based crumble and use vegetable broth instead. Or, sub in 1 can (540 mL) black or kidney beans and skip the browning step altogether.
